Sausages are the life saver of anyone who cooks in a hurry or needs a really handy protein. These are 50/50 beef:pork, locally made at our butcher's shop, gluten free, and are the kind of sausages that even non-sausage people like. We have these for breakfast, lunch, or supper. We crumble them into cassaroles or soups, bake them, grill them, or cook them over a fire.

Our cuts are priced by the pound so a deposit is taken and your final weight is calculated upon shipping.

More about This Cut

These tender little sausages are going to change your opinion on breakfast. Perfect pairing for eggs or pancakes, have a couple alongside your smoothies to increase your protein intake, chop them up into omelettes, quiche, or use them as a midnight snack when you get home late.

These are gluten free, a 50/50 mix of beef and pork, and really nicely seasoned. They are not greasy like a full pork sausage and have changed a few people's thinking about breakfast sausages.

Calculating Weights and Cost

There are quite a few links in these, and are packaged about 0.75lb/package. They are sold for $13.26/lb so the deposit is $9.00/package, the total being calculated upon weighing and due upon shipping.

Safe cooking Temperatures

The best method for cooking sausages is called a "simmer and sear" method. Simply put the sausages in a pan with enough water to cover them, simmer them tiil they're cooked through, and then place in a pan with some oil to sear the outsides. This gives you a properly cooked interior and a beautiful colour and crispness to the exterior.

We find this works well when you have to thaw the sausages out quickly, and also renders any extra fat out of the links.

Sausages that Stand Out in a Crowd

Ironically, neither Brian or Alicia particularly liked breakfast sausages prior to having them made. And Alicia definitely did not like Smokies, always too much like a hot dog. However, the butcher suggested these a few years back, done with 50/50 beef/pork.

It's safe to say we are both converts, Brian constantly goes to breakfast sausages as his quick lunch item, and Alicia loves the smokies done over a fire.

    We raise everything we sell. We've built our herds from local producers, put up our own feed, and all of our livestock are butchered at small independant businesses.

FAQ

Can we buy pure beef or pork sausages?

No we don't do a pure beef or pure pork sausage at this time. However if this is something you are interested in, talk to us. We often have animals headed to the butcher throughout the year and could make special arrangements.

What are the seasoning blends?

We do not own the recipe for the seasoning blends used in these sausages. That is a secret of our butcher's, and we don't blame him! They are so so good.

We do know however that they are gluten free. If you are concerned about an allergy to a seasoning please email Brian here to get in contact with our butcher.

Why aren't your sausages greasy?

We've heard this quite often, and it's due to two factors.

  1. The sausages are half pork and half beef, the beef is a leaner meat and reduces the overall fat content.
  2. Our pigs are not obesely fat at butcher time. And we are adjusting their feed blend constantly to ensure some fat without excess.
