Pork is the kind of protein we all love. Cost effective, nutrient dense, and when raised outdoors, it's delicious. We select our pigs for their mothering skills, the fat:muscle ratios, and size. We feed them to get beautifully marbled and wonderfully flavoured meat without the excess fat.

Our cuts are priced by the pound so this deposit is taken and your final weight is calculated upon packaging. Any balance remaining or refund is paid before shipping.

Hams are a necessity in this household, they cook quick, are delicious, and leftovers can become so many things. Ham bones are a fantastic basis for so many soups as well.

There are many varieties of ham the world over but the primary thing that defines it is that ham is a cured meat made from a pork leg. There are many factors that play into ham including the breed and diet of pig, the style of curing, the addition of flavour or not, whether the ham is smoked or not and how it is typically served all help to delineate different varieties of ham. The production of ham is believed to date back to as far as the 6th Century BC by the Etruscans around the area that is modern-day Tuscany. Calculating Weights and Cost

Boneless hams are $14.45/lb. Small boneless are 2-3lbs with a $30 deposit, large boneless are about 3-4lbs with a $38.00 deposit.

Bone-in hams are $12.97/lb and are 3-4lbs. Their deposit is $38.00.

For any of these, the total being calculated upon weighing and any balance is due upon shipping.

Safe cooking Temperatures

Pork should be cooked to 145 degrees.

We love our Meator thermometer for cooking, we are a busy household and being able to monitor the progress remotely is a big help.

First order - very good!

Wonderful tasting ham, sausages and chicken breasts. Still have to try the whole chicken! As mentioned before if the meat could be separated when frozen and prices could be more accurate on your website. Well done!

Delicious Ham

We had a very busy weekend recently. The ham we bought from Evergreen Alley Farm was delicious and came in so handy. I cooked it in the slow cooker. Cooled it completely and then sliced it thinly. A perfect “quick meal” meat to pair with potato salad and coleslaw. We enjoyed the convenience and the delicious taste.

FAQ

Can we buy bulk pork?

For sure you can. It's actually much more economical to buy a half or whole animal.

We can organize this for you, with the classic typical cut options you find on this site. And for those that understand the butchering cuts, special arrangements can be made for us to deliver an animal to the butcher when the animal is ready and for you to organize with the butcher to have the animal cut to your specifics.

Is this pastured pork?

We are close but not quite. Our sows often farrow indoors away from the others in a farrowing pen. They are moved outside to a small pen until the piglets are ready to wean. The young market pigs then spend their time in large pens, digging, rooting, and playing.

We would love to have them on pasture but as with our chickens, it's the challenge of water, protection from wild predators, and monitoring them so far from home. And they'd miss out on all the kitchen scraps, which are pretty popular!

What breed of pigs do you raise?

Brian has experimented with quite a few breeds at this point, and each have features to benefit from. The sows we have are a mix of breeds as Brian was looking for hardiness to live outdoors, moderate fat, heavily muscled, mothering instincts, and mild temperament.
