Beef can safely be cooked to a range of temperatures. Generally 125-130 is considered rare with 170 being well-done.
We love our Meator thermometer for cooking, we are a busy household and being able to monitor the progress remotely is a big help.

Easiest Supper on Earth
This staple of our supper menu never fails. Chopped up onions, carrots, potatoes, and brocolli, pop a (maybe still frozen) roast on top, toss some steak seasoning over and into a 350 degree oven.
Give it a couple hours, poke it with a thermometer and take it out when it reads 145 degrees and let it rest for 5-10 min. Slice the meat and serve.

FAQ
Can we buy bulk beef?
For sure you can. It's actually much more economical to buy a quarter, half, or whole animal.
We can organize this for you, with the classic typical cut options you find on this site. And for those that understand the butchering cuts, special arrangements can be made for us to deliver an animal to the butcher when the animal is ready and for you to organize with the butcher to have the animal cut to your specifics.

Is this grass finished beef?
"Finishing" is a term commonly used for the last stage of putting fat on a beef animal for the last few months prior to butchering.
About 4-6 weeks prior to butchering we bring the animals into the farm yard. They are given a small amount of grain daily. We find they are much less stressed at butcher time as they are accustomed to people being around them daily. This translates into a much nicer meat quality without risking the high omega 6's and 9's that come with grain based diets.
So as such, we cannot claim to be grass finished, though since the grain makes up less than 10% of their diet we can say they are primarily forage-fed.
Why can't we buy just steaks?
Goodness, do we ever wish that there were more steaks on a beef animal but one of the luxuries of a steak is that it isn't a abundant cut of meat.
The average animal only has a couple dozen steaks on them, so if we were to offer just a steak bundle, they'd be gone in a heartbeat. We do like to include them in our summertime Variety Meat box as well as some of our seasonal meat boxes.
