A Freezer Full of Beef

Beef Roast

The classic beef roast. Just the thought should make your mouth water, bring up memories of family dinners, warm kitchens, tender juicy meat, and that wonderful "full" feeling after the meal. And if it doesn't, we'd like to introduce you to one of the most classic memorable cuts of beef.

Super easy to cook, stress free meal prepping, a cut of meat that is so versatile you will wonder how you managed without these in your freezer. Cook them whole, slice them up for sandwiches, cube them for shiskabobs or stew, shred them for pulled beef, the options are endless. We carry a variety of roast cuts; inside and outside rounds, sirloin, and blade roasts are just some of the cut options. Some are bone in and that bone can be used to make fantastic bone broth or as a treat for the family pet.

Our roasts are cut aprox 3-4lbs each, and are priced at $15.61/lb. As the actual weight varies they can be ordered with a $45/roast deposit and the final price is calculated upon weighing and due upon shipping.

Stew is another classic that just calls to one on a cold blustery winter day. There is nothing more convenient or diverse as stew meat. It's so simple to brown the meat, toss it with some juices and vegetables into a dutch oven and let it be until supper-time. Typically one selects sturdier cuts of meat for stew so that it holds up well to the braising process and doesn't dry out during the long slow cooking. These leaner cuts get their moisture from the stew juices, though we also marinate them and then make shiskabobs with them. The kids particularly like this as the pieces are uniformly cut and are easy for them to assemble.

Our stew meat is packaged in 1lb packages and priced by the pound. No deposit on this item.

There isn't a more popular household staple than ground beef. From burgers to casseroles to soups, you'd be hard pressed to find a household that doesn't have this staple on hand at all times. Our ground beef is medium-lean, with very little shrinkage or fat upon cooking. While most large scale packing houses use their older and lesser quality carcasses for ground beef, ours comes from the same animals that the prime cuts do.

Packaged in 1lb packages, these sell out very fast so get your orders in asap!

Making stock is one of the simplest things around. Roast the bones for a bit, then pop them in a pot and boil for a while. Amazingly healthy and amazingly flavoured, stock made directly from the bones will surpass concentrates and imitations time and time again. Add in that the dog gets a real bone to naw on after and the whole household is happy.

Soup bones are priced at $4.00/lb. These vary in size so are sold with a $3.00 deposit for a small package and a $8.00 deposit for a large. The balance being calculated upon weighing and due upon shipping.

Tallow is something that we hadn't thought about keeping, until Madelyn learned that you can melt fat and make it. So we asked the butcher to package some bags up for us and voila, we have a new favourite product in the house. An amazing replacement for cooking oils, and it has a long list of other uses around the home.

Processing fat into tallow is so easy, its become a job the kids find too easy. Simply chop/grind it up, melt it down in the slow cooker on low, strain it and then strain again through a cheesecloth, pour into clean glass jars and store. Its become a fantastic winter project.

Beef fat is sold for $4.50/lb. Bag sizes vary, the deposit is $5.00/bag with the total being calculated upon weighing and due upon shipping.

From our Farm Straight to Your Plate

Good quality meat makes cooking easy

Variety Meat Box

The Variety Meat Box is where we started. We wanted to create a meat box that gave you the benefits of the farm; the quality of meats, the variety of cuts, and the costs. By purchasing a monthly meat box you save on the upfront cash layout and on the freezer space. You still get that farmer's market quality at your fingertips.

Each box contains a variety of beef, pork, chicken, and eggs

No one wants to eat the same thing on repeat. So we created a box that has a little bit of everything for those that want to change it up. The cuts vary each month, which keeps away the recipe dulldrums. Not sure how to cook a specific cut you've received? Just shoot us a message and we are happy to share our family favourites!

Variety of meats without the storage space

The benefit of buying a whole or half animal is that you get all the available cuts. The downside is the upfront cost and the storage space. Purchasing a subscription for the Variety Meat box gives you the benefits of a bulk meat purchase, without having to store three different types of proteins in your freezer.

Health benefits of eating a variety applies to your meats too

Different foods have different nutrients, and the only way to ensure you're getting all your nutritional needs met without supplementation is to eat a wide variety of foods. It is so easy to get into the "meal rut" of just a handful of foods but with a variety meat box you get the opportunity to explore different foods. If you're ever stuck for a recipe (or find a great one to share) check out our Pinterest page EvergreenAlley Meals!

Bulk purchase cost without the upfront investment

The Variety Meat Box is by far the best bang for your buck. Since all of the cuts in this box are raised here on the farm, butchered locally, and delivered straight to your door, more of your money is going straight into your freezer as nutritionally dense and healthy meats. Each month you get a different combination of beef, pork, chicken, as well as three dozen eggs. We do try to keep the seasons in mind, as well as holidays, but they are a surprise.

Butchered at inspected Manitoba facilities

We want to make sure that every dollar spend here ends up directly in a small family operation's pockets. Our large animals are processed in Killarney, MB at Killarney Meats. The chickens are killed at Waldner Meats in Niverville after which we piece them out ourselves in a local commercial kitchen.

Eggs washed in clean warm water, no chemicals

As eggs are laid with a natural coating to prevent the intrusion of bacterias through the porous shell we wash our eggs with simply warm water just before they are sold.

Order before Monday night to get it shipped on Wednesday.

Frequently Asked Questions

WHAT IS IN EACH BOX?

The Summer box contains cuts specifically designed with summer in mind. They can be whipped up into a quick meal for busy days, cooked over a campfire, tossed on the BBQ, whatever your creativity can come up with.

WHAT ARE YOUR ANIMALS FED?

The livestock at Evergreen Alley are fed a combination of feeds depending on the stage of growth. Chickens are fed special feed for chicks and electrolytes until they are 3 weeks old, then they move outdoors and feed a grain and supplement mix.

The cattle spend as much time on pasture as we can in the favourable seasons, then hay and cover crop bales in the winter. For the final 60 days they are fed a bit more grain with their forages, this helps give that marbling in the meat without the superficial fat.

The pigs spend their time outside, with their mom's for the first 3 weeks. Then they are fed a mixture of grains and supplement and kitchen scraps (their favourite!).

WHERE DO YOU DELIVER TO?

With this launch online we are delivering to Brandon, Boissevain, Killarney, and Deloraine MB. If your are from outside of this area and interested please email us, we would love to know which area to expand into next!

HOW DOES THE DISCOUNT WORK?

By purchasing a subscription to the Monthly Meat box you pay a deposit of $50/box upfront. You then only have to pay the remaining balance on your box at delivery time. We typically sell subscriptions in 6 month blocks at this time.

WHAT IS YOUR RETURN POLICY?

We want you to be completely satisfied with your purchase. Unfortunately due to the perishable nature meat and eggs we are unable to offer a refund. We try our best to package everything in a way that ensures a safe arrival. If for some reason you are not satisfied, please reach out to us. We want to know what went wrong so we can improve our system and your experience.

WHAT OTHER PRODUCTS DO YOU CARRY?

We are looking at launching a variety of meat bundles and packages. We want everyone to experience the benefits of quality meats like they were on the farm themselves (without the work of course). We are planning Quick and Easy, Harvest Crew, Kids Choice (Madelyn and Sam loved making this one), Smoking and Grilling, Pioneer, as well as a Summer/Winter box. Let us know what catches your eye!

We have recently added goats to the farm and can source lamb as well.
