Bulk Beef

Buying in bulk is the classic way to purchase meat off the farm. In the past, one would buy the animal from the farmer, contact the butcher, select the cuts, and pay each party individually. Then arrange pickup. We are eliminating all the confusing middle steps for you. We have noticed which cuts are the most popular and get the most value from a carcass. You get the cost and variety benefits of buying bulk without the headaches and confusion.

Why buy in bulk?

Bulk beef is the best way to get great value for your dollar. You can get a variety of cuts, including all the costly ones, for a balanced out flat rate. We have animals headed to the butcher all year around so if your freezers are full of summer garden goods or holiday baking, that's ok. We can reserve an animal for whenever you are ready.

You are getting more pounds of meat and less of fat than commercially fed animals since we raise our beef out on pasture and then on forages through the winter. The meat is cleaner, beautifully marbled, tender and juicy.

Cooking the Contents

There is no end to the options when you buy meat this way. Any recipe you come across is fair game when you have this variety and quantity of cuts. We've saved a few recipes over on the Evergreen Alley Meals Pinterest page.

Cooking Temperature

Beef can safely be cooked to a range of temperatures. Generally 125-130 is considered rare with 170 being well-done.

We love our Meator thermometer for cooking, we are a busy household and being able to monitor the progress remotely is a big help.

Slide the tip of the thermometer into the thickest part of the meat and wait 30 seconds for it to read accurately.

Our Favorite Recipe

Stroganoff

This recipe holds a special place for Alicia. Her mom used to make it for her birthday upon request every year.

Directions

  1. 1 round or sirloin steak, cut into 1/4" strips and dredge in flour and salt
  2. Saute in butter and remove from the pan
  3. Saute 1 cup mushrooms, 1/2 cut onions, and 1 clove of garlic until tender, remove from pan
  4. Add 2 Tbsp butter, 2 Tbsp tomato paste, and 3 Tbsp flour to pan, (this is easier if done off the heat)
  5. Slowly add 1.5 cups of beef stock to the pan, blending into the flour and tomato paste mixture.
  6. Add the meat and the mushroom mixture back into the pan.
  7. Stir in 1 cup sour cream and 2 Tbsp sherry. Heat briefly before serving.

This was typically served with broad egg noodles and peas.

I gave 4 because of the thawed meat. So far only tried the hamburger which was good.I was disappointed when it arrived because the hamburger was already thawing and made a mess with blood. Hubby was having a time trying to wipe everything off fast to get it in the freezer. I was wondering if the delivery guys in Brandon left it out over night. It was delivered the following day. My son thought the steak was good found it a bit chewy. Not sure we would do a frozen order again. Thought there is to much hamburger Would rather some more of something else. Having steak tomorrow can’t wait to try it. Very prompt service.

How much do I need?

How much meat does my household need?

According to Statista, per capita, Canadians consumed about 78 lbs of chicken, 38.56 lbs of beef, and 33.79 lbs of pork in 2022.

Things to consider...

  • How much do you cook at home?
  • Would having a stocked freezer make it simpler to prep your meats and then just toss together a quick lunch for on the road?
  • How often are you entertaining guests or taking meals to others?

If you estimate based on the above numbers, multiplied by the number of household members, you'll get an idea of how much you need. We guess that a household of 2 would use about a quarter of beef and half a pork in about a year. Giving yourself a 6-9 month supply is ideal so ensure you use everything up before you restock.

By the Cut VS buying bulk

  1. Typically you save about 15% of the cost when you buy in bulk instead of just buying a cut when you need it.
  2. You get the benefits of having wide variety at your fingertips. There's no panic if a family emergency means double the plates at the dinner table or a neighbour suddenly needs a "heal your soul cassarole". Your freezer is stocked and you are ready.
  3. There's no need to wonder if everything you are wanting is available at the time. When you reserve a bulk order ahead of time, you order gets filled before all the meat boxes and the Shop All page is stocked.

Quarter of Beef

A quarter of a beef is about 90-95 lbs. You get cuts from both a front and hind sections of the animal, often referred to as a "half of a half" so that you get a good variety of cuts.

  • ground (aprox. 42 lbs)
  • stew (aprox 2 lbs)

Half a Beef

A half of a beef is about 180-190 lbs. You get all of the cuts from one side of the animal. This is a great variety and volume of cuts.

  • ground (aprox 84 lbs)
  • stew (aprox 8 lbs)

Whole

You are getting the whole animal, which averages to ___ lbs of meat. The standard cuts are listed here as well as an estimation of the percentage of the animal that each cut gets.

How is the Meat Packaged?

Roasts

We have our roasts cut about 3-4 lbs each. We find they cook quickly, even from frozen, at this size. It is also the perfect amount to make supper one night, kids lunches for the week of school and a few for the adults too! You can check our more about our roasts here.

Ground Beef

We have our ground beef packaged in 1lb bags, we find it is better to just take out two if needed than have too much thawed out for a recipe. Click here for more information about our Ground Beef.

Steaks

Our steaks are cut at 1" thick and packaged 2/package for most grilling steaks. Depending on the size of the steak, sometimes we package the round and sirloin at 1/package.

Stew

The cattle fertilize the land, the people are healthier for being outside and taking care of them, the butchering is done by a small family business in our local area. You can know that every dollar you spend is going directly to another family.

    We are all wanting the best bang for our bucks. By raising nutrient dense foods you are feeding your family and yourself more of what your bodies need in the same volume of food. You can buy cheaply raised meats but you will have to eat so much more of it to feel full and satiated. With meats raised the way we do, there are more nutrients in the same cut of meat vs large scale commercial operations.

What else do you have?

We raise all of our beef, pork, chicken, and eggs. As it is butchered locally we can arrange for specialty cuts if that is something you are interested in. We've recently added all of our available individual cuts to the site under their respective pages.

Where do you ship to?

We deliver our meat boxes to Brandon MB and local to Boissevain at this time. We will happily expand into your community and area as demand grows so don't hesitate to reach out to us and inquire about your area!

How to cook it?

Meat is really not as complicated as your favourite cooking show makes it seem. When one is working with lesser quality meat then the cook becomes more particular to get those ideal responses but with meat quality like this, you can be much more forgiving of yourself and still have a stellar product when you finish. A little bit of marbling means that the meat doesn't dry out and get tough during the cooking process.

Our family favourite recipes will be added here but your family cookbook, Pinterest, and a quick internet search for recipes with give you many many ideas. We keep it simple ourselves, easy seasoning, simple process, and consistently stellar results that is kid approved (cause they are the toughest critics)!

My freezer is full at the moment...

We hear this all the time, and sometimes we find ourselves saying it too. But we always have to ask ourselves two things; are the things in that freezer good for you? And secondly, how long have they been there?

So many times we are spending valuable freezer space on things that are not good for us, or on things we may never eat anyway. We always try to remind ourselves that if it's something we won't use, we might as well put something in the freezer that we will.
